People ask me all the time why I serve French onion soup in an Italian Restaurant, of all places? Well, I will tell you why we serve French onion soup in this Italian Restaurant! It's not because it's somewhat inexpensive to make and we're trying to pinch pennies or anything, and it's also not because it's my Favorite (don't get me wrong-it's an amazing flavor-full soup loaded with asiago Cheese on top of delicious slices of Italian crusted bread - I mean, what could get better than that! but I have been eating it since I was eight years old and enough is enough, capish?) Some people are surprised when I tell them, but we actually serve this soup because it happens to be the very first thing I ever learned to make!

Although, throughout the years some of the technique has changed, for the most part the recipe is exactly the same. When I was young and still figuring out this whole cooking "thing," I would resort to my own little way of thinking when it came time to create. For instance, what would I need for French onion Soup? Okay...beef base...onions...salt...pepper...and the big pot mom doesn't like me using because its impossible to clean. I would have to use the stove, of course, then boil...and wait. (Trust me-it made sense at the time.)

After a few hours of boiling my pot of sliced onions - (Which by the way, took forever to cut due to me crying to the point where I would literally be forced to resort to putting on swimming goggles and breathing through a snorkel) - My French Onion Soup was born! I've been continually working on that same recipe and it has come a long way and I feel it's better now than ever. So without further adieu, I present my French Onion Soup:

Ingredients:

8 medium onions, sliced (snorkel optional)
5 Tbs. Olive Oil
4 cups water
3 Quarts of Beef Broth
Salt & Pepper to taste
1/4 cup Worcheshire Sauce

In a large pot, heat up olive oil, add onions and let cook for approx. 6 min. Stirring occasionally. Next, add the 4 cups of water (the water is going to prevent the onions from burning) Bring to boil and let cook for another 10 min. Next add the rest of the ingredients, bring to boil and let stay at a boil for an additional 10 min. Now you're ready to serve.

*don't forget the Italian bread and cheese!
